Read the roast date, not the "best before" date
The single most important thing on any bag. Coffee is best within 2–4 weeks of roasting, and starts losing aromatic complexity well before it's technically "gone off." A "best before" date 12 months out tells you nothing useful — always look for an actual roast date, and be wary of bags that don't print one.
Roast level changes the flavour, not the strength
- Light roast — more acidity, more origin character (fruit, floral, tea-like notes), less body. Common for filter/pour-over.
- Medium roast — balanced sweetness and body, the most versatile choice across brew methods.
- Dark roast — more bitterness, less origin character, heavier body. Traditional for espresso, though many specialty roasters now use medium roasts for espresso too.
